چکیده

Probiotic yogurt is a popular functional food to deliver of probiotic cells for the health-enhancing effects worldwide. The viability probiotics in before consumption most important factor providing desired effects, however, microorganisms have occasionally inadequate marketable products. In this current study, Bifidobacterium spp., L. acidophilus and yoghurt starter bacteria enumerations were made commercial freeze-dried mixes. RCA 5.3 MRS 5.2 media used delbrueckii subsp. bulgaricus counting, ST Agar M17 Stretococcus thermophilus counts. While using MRS-Bile RCA-Clindamycin enumeration, spp. counts performed MRS-NNLP medium. 5 out samples (A, C, D, E) did not reveal satisfactory recovery (< log CFU/g) colonies on while colony below CFU/g same tested 4 E). rates over 9 obtained all both media. problem insufficient that occurred some was valid S. thermophilus. This work indicated high amounts detected two declared as label (F G). On other hand, bifidobacteria determined above only 1 sample (B) 7 yoghurts claimed be study reveals relevant information yogurts Turkey discusses detail possible reasons results obtained.

Plant extract enhances the viability of Lactobacillus delbrueckii subsp. bulgaricus and Lactobacillus acidophilus in probiotic nonfat yogurt

A commercial plant extract (prepared from olive, garlic, onion and citrus extracts with sodium acetate (SA) as a carrier) was evaluated to extend the viability of yogurt starter and probiotic bacteria as a means to enhance the shelf life of live and active culture, probiotic nonfat yogurt. Yogurts prepared from three different formulas (0.5* plant extract, 0.25* SA, or no supplement) and cultur...

Antimicrobial activity and antibiotic susceptibility of Lactobacillus and Bifidobacterium spp. intended for use as starter and probiotic cultures

Antimicrobial activity and antibiotic susceptibility were tested for 23 Lactobacillus and three Bifidobacterium strains isolated from different ecological niches. Agar-well diffusion method was used to test the antagonistic effect (against Staphylococcus aureus, Escherichia coli, Bacillus cereus and Candida albicans) of acid and neutralized (pH 5.5) lyophilized concentrated supernatants (cell-f...

Interactions between Lactobacillus acidophilus strains and the starter cultures Lactobacillus bulgaricus and Streptococcus the

It has been observed that Lactobacillus acidophilus has poor survivability in fermented goats’ milk. In this study, interactions between L. acidophilus and starter cultures during goats’ milk fermentation were investigated using three strains of L. acidophilus: ATCC-11975, LA-5 and NCFM, and the starter cultures (Lactobacillus delbrueckii subsp. bulgaricus (LB350) and Streptococcus thermophilus...
